Thrifty Elegance

I don’t plan on talking about food on this blog very often but I cam across a wonderful recipe today that I jumped off the sofa and made immediately and I just had to share it. I found it via pinterest and followed the links to the RECIPE. I happened to have read THIS article about how to save money by having a special place in your fridge to put food that needs to be eaten soon or it will go bad. It just so happened that I have several avocados and eggs that needed to be eaten ASAP. We didn’t have all of the ingredient to follow the recipe on the blog so I just worked with what we had, which of course is the essence of being thrifty!
Avocado Egg Salad
8 eggs hardboiled coarsely chopped
3 avocados mashed
1 stalk celery finely chopped
a little red onion chopped
sea salt to taste
pepper to taste
I mashed the avocado and them mixed in the other ingredient and it tastes AMAZING! The red flakes on in the photo are the 7 Pepper mixture that my dad made but feel free to use regular black pepper if that is all you have. I have a few little tips to go along with the recipe that some people will know but some may not.
1.Light a candle next to where you are chopping onions to keep your eyes from burning and watering.
2.After the eggs are done cooking put them in ice water to make it easier to peel them.
3.Add a little lime juice to the avocado mixture to keep it from turning an icky brown color, the citrus keeps the avocado (and also apples) from oxidizing.
